Well, I need to apologize for being MIA on the blog. I just have a ton going on. No fear. I am back! Today I am sharing with you my Breakfast Casserole. Actually, I got this recipe from my BFF’s family. It has turned out to be mine and the hubs favorite of all the breakfast casseroles I make. Now let me show you these 4 simple ingredients:
Now, don’t let the cottage cheese scare you. It’s amazing! Here are the ingredients you will need:
- 1 lb. of sausage
- 1 lb. or 16 oz of cottage cheese
- 1 dozen eggs
- 2 cups of shredded cheddar cheese
Preheat the oven to 350°. Brown the sausage. In a large bowl, whisk the eggs until mixed together. Add the remaining ingredients and mix well. Pour into a 9×13 pan. Bake for 45-1 hour or until knife inserted in the middle is clean.

The cottage cheese makes this casserole rise. I love it! It is so quick and easy. Today I upped the temperature to 375° since I was baking Hashbrown Casserole along with it. That will be on the blog tomorrow so please stay tuned!!!
